“Sustainable health community can be strengthened by the basics of food safety in the community resulting from the cooperation of restaurant operators and stalls in the area”

The Nakhon Sawan Campus Project is located in Khao Thong Subdistrict, Phayuha Khiri District, Nakhon Sawan Province, which is about 15 kilometres away from the city. The community's living and food habits resemble those of a rural area. The primary food sources include community restaurants, flea markets, hawkers, and stalls, continually improving food safety and sanitation practices. However, consuming unclean food is a significant cause of diseases caused by pathogens and chemical contamination. Therefore, it is essential to establish a system to supervise and control every process in food safety. The Bachelor of Public Health program in community health, in collaboration with Ban Khao Thong Subdistrict Health Promoting Hospital, is working towards creating a safe food system in the Khao Thong community. They collect food samples from restaurants, flea markets, and stalls, checking for contaminants such as chemicals and microbes. They also conduct public relations campaigns to educate the community about clean and safe food consumption, aiming to improve the food quality in the community. Their goal is to build consumer confidence in the community and in visitors, increase knowledge of the health effects of food contaminants among operators, and create a sustainable, safe food system in the community.

2. Objectives
        1. To monitor the food safety situation in Khao Thong Sub-district, Phayuha Khiri District, Nakhon Sawan Province, for any signs of contamination from chemicals or microorganisms in food and water.
        2. To promote food safety awareness among stall operators in Khao Thong Sub-district, Phayuha Khiri District, Nakhon Sawan Province.
        3. To equip students in the Bachelor of Public Health program in Community Health to identify contaminants in food and educate food stall operators on the health impact of chemical and microbial           
            contamination. Additionally, students will gain knowledge of food safety management principles.

3. Methods of operation
       1. The Bachelor of Public Health Program's Community Health works on a food safety and sanitation project called 322. They are collaborating with Ban Khao Thong Health Promoting Hospital to create a safe restaurant program prioritizing consumer health. This project will continue annually and will seek financial support from the health insurance fund at the local or area level through the Khao Thong Subdistrict Administrative Organization.
       2. The Ban Khao Thong Health Promoting Hospital has instructed its public relations team to inform restaurant operators, flea market vendors, and stall owners about the project's activities.
       3. During their studies in the Bachelor of Public Health program's community health, teachers and students in the 322 Food Safety and Food Sanitation course collect samples to test for food, water, and ice contaminants. For example, they check for chemicals such as borax, salicylic acid, sodium hydrosulphite, formalin, and polar substances found in frying oil. Additionally, they look for pesticide residues and microbial contamination in food, drinking water, containers, and on food handlers' hands. They use a straightforward assay to detect coliform bacteria.
       4. As part of our work for the Ban Khao Thong Subdistrict Health Promoting Hospital, we will compile reports on chemical and microbial contaminants in food sold at restaurants, flea markets, and stalls. We will then provide this information to the operators of these establishments. In addition, to further promote health and safety, our team of students will also create posters to educate the public on the risks associated with these contaminants and recommend methods for managing food to reduce these hazards.
       5. Listen to entrepreneurs' opinions during the visit and summarize the performance.

4. Productivity and results
      1. Ban Khao Thong Health Promoting Hospital, which is a community healthcare agency, has been monitoring and aware of the food safety situation in the community continuously every year.
      2. The entrepreneurs running restaurants, flea markets, and stalls in the Khao Thong community are aware of potential contaminants in their food ingredients. To enhance the safety and quality of their raw materials, they are taking steps to gain knowledge about the health effects of chemical and microbial contamination in food ingredients.
      3. Bachelor of Public Health program students practiced building positive relationships with community members and gained skills in detecting chemical and microbial contaminants through food sampling. They also observed and provided suggestions for improvement.

5. Impact
Over three years and five months, the Nakhon Sawan Campus Project at Mahidol University collaborated with Ban Khao Thong Health Promoting Hospital, a community healthcare agency, to conduct in-field inspections for food and water contamination at local restaurants and stalls. Through this collaboration, we became aware of the food safety situation in the Khao Thong community and initiated continuous surveillance to benefit consumers. We also worked to inform restaurant operators and community stall owners about contaminants in the food ingredients they sell. We encouraged them to improve the quality of their raw materials for safer consumption. Entrepreneurs must understand the health effects of the pollutants detected, raising awareness of food safety in the community. We plan to continue our food sampling program the following year, as a free service. Our efforts aim to make community residents and visitors feel confident and safe while using restaurant services, ultimately reducing the chance of illness caused by contaminated food and water. This collaboration has created a more secure food system in the Khao Thong community.
